I have the best job ever to be able to eat all day long. Secondly, I am always trying new recipes which means that I have fun testing new flavor combinations, which is a lot of fun.

However, being a food blogger does have a down side. For me, it’s always having a sink full of dishes, a messy kitchen with small appliances everywhere and food stains on my hands, clothing and counter top. Speaking of food stains, it’s impossible for me to be neat and organized in the kitchen. I like to make two separate recipes at time to photograph on the same day. Naturally, some food ends up on the floor, on my shirt, rubbedon my pants, spilled on the counter or burnt in the oven.

Fresh fruit and vegetables are my favorite use in recipes. I had a nice bowl of seasonal cherries to work with in this recipe. I love cherries, but they are very messy and stain everything and if I don’t have access to napkins, I usually pass on eating a delicious bowl of this fruit like this.

Very little of it makes it to the garbage or sink because, let’s face it, styling the food plate and taking pictures is a must before the sunny sky turns into clouds. No matter how hard I try to keep my space problem free, I still end up with all the above. Lastweek I madea chocolate cake and everything was perfect until my sleeve ended up in the cake batter bowl. Like seriously, I have issues or maybe I’m normal and everyone else has kitchen issues, too?

In my family, I’m known for getting food all over the stove top while cooking. I guess I’m more concerned about the recipe than worrying about how much food I tossed out of the pot while stirring.

I love incorporating fresh summer berries into recipes. I love the beautiful red, purple and blue tones it adds to photography. Last year, I was able to get my hands on fresh pomegranate for the first time. I had no idea how to cut it and remove the seeds and I’m still learning. I only heard others talk about how much of a pain removing the seeds caused. I had no idea just how messy the fruit truly is. I got out the white cutting board and sharp knife and cut it in half. Okay, not entirely bad yet but as I started to remove the fruit inside, juice ran everywhere. It was all over the counter top, my fingers and clothes. Cherries are no different. They taste amazing but can be difficult to work with as they are very messy and stain everything.

When I work with tough food, I like to have the portable Shout® Wipes in my purse or at the office to deal with any unexpected stains that may get on my clothes. Ingredients

  • 2-3 cups kale
  • 1/2 tablespoon olive oil/coconut oil
  • 1 medium lemon
  • 1/4 cup blueberries
  • 1/2 cup diced cherries
  • 1 avocado
  • 1/4 cup pecans , chopped

Instructions

  • Place kale in a medium bowl. Message the kale to break down the toughness until it becomes limp, about 1 minute. Add a little olive oil if needed during messaging it. Squeeze lemon juice into bowl with olive oil and mix with greens. Add chopped cherries, blueberries and pecans. Slice, peel and remove pit from avocado, then slice and place in bowl. Toss salad and top with Parmesan cheese if desired.
