Make the most of the season’s fabulous winter ingredients such as squash, chestnuts, Jerusalem artichokes and parsnips to create these vegetarian Christmas mains, starters and sides. How about a goat’s cheese, squash and mushroom pithivier? Or Marcus Wareing’s roasted onion tarte tatin? You could consider these recipes if you’re simply not a lover of turkey, too.
